Inspired by Tieghan Gerard of @halfbakedharvest, this Sheet Pan Salmon is SO easy and SO delicious, and healthy too! The heat from the Chipotle Salmon paired with the cool Greek Yogurt Cilantro Lime sauce on a bed of roasted veggies and hearty brown rice…this is a weeknight meal for the books. Sheet Pan Chipotle Salmon with Cilantro Lime Sauce Inspired by @halfbakedharvest

Ingredients:

  • 2 small sweet potatoes, cut into 1/4 inch rounds

  • 1 yellow onion, sliced

  • 1 orange belle pepper, sliced

  • salt and pepper for seasoning

  • 4 six to eight ounce portions of fresh Norwegian salmon, skinless

  • 1 tsp smoked paprika

  • 2 tsp chile lime seasoning

  • 2 tsp Cajun seasoning

  • 1-2 cloves of garlic, minced

  • zest and juice of 1 lime

  • 2 cups kale, chopped and massaged with 1 tsp oil

  • 2 cups of cooked brown rice

  • sliced avocado for serving

Cilantro Lime Sauce

  • 1 cup plain greek yogurt

  • juice of 1 lime

  • 2 tsp honey

  • 1 cup cilantro, roughly chopped

Directions:

Preheat oven to 425 degrees Fahrenheit.

Prep your sweet potatoes, onion, and pepper and put on rimmed baking sheet with a dash of oil, salt and pepper. Toss to coat with oil and bake on 425 for 20 minutes.

Season the salmon generously with smoked paprika, chile lime seasoning, cajun seasoning, garlic, salt and pepper. Juice the lime over the seasoned salmon and reserve the rinds for zest.

After 20 minutes, take the baking sheet out, push the veggies to one side and place salmon on the empty side. Return to the oven for 10-12 minutes, until salmon is cooked to desired done-ness.

To make the Cilantro Lime sauce, place all ingredients in a blender and blend until smooth. Add more yogurt or some oil until you reach desired consistency.

Massage your kale and remove the sheet pan from the oven. Plate your rice first, then your kale, veggies and finally the salmon. Drizzle with the sauce and garnish with cilantro and sliced avocado (optional).
