Another recipe inspired by @halfbakedharvest but we subbed out the chicken for our sustainable Norwegian salmon. So so delicious, you’ll think this is a guilty take-out meal except it’s packed with fresh veggies and high quality protein. Did I mention it all comes together in 30 minutes? Easy Thai Noodles with Seared Norwegian Salmon Inspired by @halfbakedharvest

Ingredients:

  • 1 1/2 lbs of fresh Norwegian Salmon cut into 3 portions

  • 6 oz of stir fry rice noodles

  • 1/3 cup tamari

  • 3 tablespoons oyster sauce

  • 1 tablespoon fish sauce

  • 2 teaspoons honey

  • 2 tablespoons sesame oil or olive oil

  • 2 tbsp basil paste (or 1 cup fresh basil if you have it!)

  • 2 shallots, thinly sliced

  • 3 cloves garlic, minced or grated

  • 1 jalapeño, seeded and chopped

  • 2 green onions, chopped

  • 1 medium zucchini, cut into ribbons

  • 1 red bell pepper, thinly sliced

  • 2 carrots, cut into ribbons

Directions:

Cook your noodles according to the directions on the package and drain.

Heat the oil in a large pan over medium heat. Heavily season the salmon with salt and pepper and sear on both sides for about 1-2 minutes each side then remove from the pan. Don’t worry if it’s not fully cooked, you’ll be adding the salmon back to the pan later.

Add the shallots, garlic, green onion and jalapeño to the oil you just cooked the salmon in. Once fragrant, add the zucchini and bell pepper and cook another 5 minutes.

Whisk together the tamari, oyster sauce, fish sauce, and honey with 1/3 cup of water and to the pan, letting it boil and reduce.

Once the sauce starts to thicken add back the salmon and cook for 1-2 minutes. Add the noodles and carrots and make sure noodles are coated in sauce.

Serve with fresh green onion and sesame seeds. Enjoy!
