Salmon Burger with Lemony Potatoes
Ahhh the salmon burger. Salmon burgers rarely get tackled in our home kitchens so we decided to debunk the mystery for you. We believe in quashing the stigma that seafood is intimidating to work with in your home kitchen which is the reason we created the following recipe. Pair this hearty burger with some oven roasted lemony potatoes and you have yourself one delicious summer meal.

Salmon Burger with Lemony Potatoes by Nutritionist Alicia Spangenberger

Ingredients:
2 six ounce Villa frozen salmon portions, thawed
1 cup panko bread crumbs
1 1/2 tbsp mayo
2 tbsp dijon mustard
pinch cayenne
1 clove garlic, minced
1 tbsp chives, chopped
1 lemon (juice & zest)
1 tbsp butter
1 1/2 lbs gold potatoes, chopped into fry shape
2 tsp olive oil
1 tsp salt
1 tsp pepper
Chives, chopped for garnish
2 brioche buns, cut in half
1 tsp sriracha sauce
1 tbsp mayo
3 slices of onion
2 pieces fresh lettuce
Instructions:
Bring 5 cups of water to a boil in a pot medium sized pot and salt generously
Preheat oven to 425 degrees Fahrenheit
Chop potatoes in fry slices and par boil in pot for 4-5 minutes
Strain potato slices and add to a baking dish with olive oil, salt, pepper, & juice & zest of 1/2 of the lemon and toss to combine. Make sure that the potatoes have enough room to lay flat in one layer. Bake covered with tinfoil on 425 for 30-40 minutes or until crisp.
Chop the salmon portions into 1/2 inch cubes - put half of the salmon into a food processer with panko, 1 1/2 tbsp mayo, 2 tbsp dijon mustard, cayenne, minced garlic, chopped chives, juice & zest of the other 1/2 of the lemon. Pulse the mixture until fully combined. Add the mixture to a bowl with the remaining salmon chunks and stir together so that salmon chunks are dispersed evenly. Use oiled hands to make salmon burger patties out of the mixture.
Melt butter in a cast iron pan and sear salmon burger on both sides for 4-5 minutes each. Cover the pan with a pot cover so that burger cooks all the way through.
Combine mayo & sriracha and spread this sauce on the brioche bun, plate the burger on the bun with lettuce and onion.
Remove potatoes from oven & serve hot after sprinkling fresh chives on them. Enjoy!
