Peanut Sesame Norwegian Salmon Stir Fry

Ingredients:

  • 2 Villa 8 oz salmon portions, thawed and cubed

  • 2 tbsp butter

  • 1 clove garlic, minced

  • 1/2 onion, chopped

  • 3/4 cup red pepper, cut in bite sized slices

  • 3/4 cup yellow pepper, cut in bite sized slices

  • 1/2 cup asparagus, cut in bite sized pieces

  • 3/4 cup savoy cabbage, shredded

  • 1 tsp salt

  • 1 tsp pepper

Sauce Ingredients

  • 3/4 cup soy sauce or tamari

  • 2 tbsp peanut butter, we used crunchy

  • 1/4 cup olive oil

  • 2 tbsp apple cider vinegar

  • 1/2 cup water

  • 1 tbsp sesame seeds

Directions:

Prep all your veggies and cube your salmon.

Melt 1 tbsp butter in a medium/large sauté pan and add garlic and onion, cook for 2 minutes on medium heat and then add the rest of the veggies except for the cabbage.

While the veggies cook down, prepare the marinade by putting all of the sauce ingredients in a medium sized bowl and whisk to combine. Add the salmon to the bowl to marinate while you continue to cook the veggies.

Add the savoy cabbage and continue cooking until veggies are soft. Once veggies are cooked through, remove from the pan and set aside.

Add the remaining tbsp of butter to the pan and melt. Put the salmon cubes in the pan, cooking on 2-3 minutes each side. Cook fully on one side and then once you turn the salmon over, pour the marinade into the pan to thicken.

Once salmon is done, you can remove from the pan and then add the veggies back. Coat the veggies in the sauce (Removing the salmon allows you to keep the salmon from flaking and breaking apart while you coat the veggies in the sauce) Add the salmon back to pan and serve. Garnish with sesame seeds and enjoy!
