Baked Icelandic Halibut with Roasted Carrots and Bacon Broccoli Cream Sauce. This recipe was born out of quarantine ingredients and we could not have been happier with the outcome. The halibut itself is flaky and delicious on it’s own but paired with sweetness of roasted carrots and the rich bacon-y, garlic-y cream sauce - we couldn’t help but go back for seconds.

Baked Halibut with Roasted Carrots and Bacon Broccoli Cream Sauce by Holistic Nutritionist Alicia Spangenberger

Ingredients:

  • 2 halibut fillets (approx. 2 lbs)

  • 6 large carrots cut into 1/2 inch thick sticks

  • 1 1/2 cups of grated parmesan cheese

  • 1 tbsp avocado oil or high heat cooking oil

  • 8 large broccoli flourets, finely chopped (see picture above)

  • 8 pieces of bacon, finely chopped

  • 1 cup of diced white or yellow onion

  • 1 cup full fat cream

  • 1 clove of garlic, minced

  • 2 tablespoons of butter

  • salt & pepper

 

Instructions:

Preheat oven to 420 degrees Fahrenheit

Slice your carrots into sticks and spread out on a baking sheet, tossing with avocado oil, salt & pepper. Roast for 25 minutes at 420 degrees

Melt butter in a medium sauce pan on medium heat then add onion, garlic, bacon and season with salt and pepper. Cook this down for about 5-6 minutes and then add finely chopped broccoli.

Once everything in sauce pan is soft and cooked through, add your cream and stir to combine - keep this on low to medium heat as the sauce thickens.

Season the halibut fillets with salt and pepper and top with the grated parmesan cheese.

Remove the carrots from the oven, push to one side of baking sheet and place halibut fillets on the open side of the pan. Return the entire pan to the oven for 8-10 minutes. Feel free to turn the oven to broil for the last couple minutes in order to get some color on the parmesan.

Plate the dish with broccoli bacon cream sauce down first, then roasted carrots and finally a portion of the halibut fillet. Enjoy!
