Baked Haddock with Lemony Green Beans. This meal is classic New England which is why we love it so much. We may also love it because it comes together in less than 30 minutes and is absolutely delicious. Haddock is one of our favorite white fish species to handle as it holds together really well in cooking.

Baked Haddock with Lemony Green Beans by Holistic Nutritionist Alicia Spangenberger

Ingredients:

  • 1 haddock fillet (approx. 1.5 lbs)

  • 2 cloves garlic, minced

  • 1 lemon

  • 1 cup Italian spice bread crumbs

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 3 cups green beans, roughly chopped

  • 1 cup white onion, chopped

  • salt & pepper

 

Instructions:

Preheat oven to 350 degrees Fahrenheit

Heat your olive oil in a sauté pan & sauté onions for 3-5 minutes, then add your green beans

Grease baking dish & coat haddock fillet with minced garlic, salt, pepper & bread crumbs. Use juice from half of the lemon and squeeze all over the top of breaded haddock. Add gobs of butter to the top and cook in the oven for 15 minutes or until breadcrumbs are golden brown.

You may need to add some olive oil or put oven on broil for the last minute to get the breadcrumbs to crisp up.

While the haddock cooks, finish your green beens by adding the juice from the other half of the lemon and feel free to add lemon slices for extra flavor/garnish.

Remove the haddock from the oven and serve with green beans once they are nice and tender!
