Blackened Salmon with Peanut Curry Sauce & Brown Rice

Ingredients:

  • 2 six ounce Villa Salmon portions, thawed

  • 1 tbsp olive oil

  • 2 cups cooked brown rice

  • 2 tsp smoked paprika

  • 2 tsp garlic powder

  • 2 tsp cumin

  • 2 tsp chili powder

  • pinch salt & pepper

Peanut Curry Sauce

  • 2 tbsp olive oil

  • 1 clove garlic, minced

  • 1 thumb of fresh ginger, peeled & minced

  • 3 tbsp peanut butter

  • 2 tbsp red curry paste

  • juice of 1 lime

  • 3 tbsp soy sauce

  • 1/4 cup water to thin

  • salt & pepper to taste

  • 1/2 cup fresh cilantro, chopped

Instructions:

Combine the smoked paprika, garlic powder, cumin, chili powder, salt & pepper in a small bowl and cover the salmon portions with the seasoning.

Heat 1 tbsp olive oil in a cast iron pan & sear salmon on each side for 3-4 minutes.

To make the sauce, heat 2 tbsp olive oil in a sauté pan then add garlic and ginger and sauté until fragrant. Add in the peanut butter, curry paste, lime juice, soy sauce & whisk to combine.

Add salt & pepper and then water to thin until it becomes a sauce consistency. Then add chopped fresh cilantro.

Plate brown rice first, then the salmon portion and drench your salmon portion in the peanut curry sauce.
